#StepIntoSummer Week Three


So, week three is here on my Weight Watchers #StepIntoSummer mission. As with last week, it’s not been totally plain sailing – with eating out being my biggest downfall. But, I am absolutely loving trying out new recipes and finding ways to make my usual treats that little bit more Weight-Watchers friendly. For example – rather than having fried eggs, bacon and toast for breakfast at the weekend (yes, I know… NOT healthy, but very tasty). This weekend I switched out the bacon rashers for bacon medallions – which to be honest I prefer anyway as removed all the fatty bits. Then I made scrambled eggs with 1 calorie spray cooking oil instead of fries and then switched the white toast for a crumpet. Easy little changes but saving a few points in the meantime – with no feeling deprived at all. That side of the Weight Watchers plan has definitely been my favourite so far – the looking at current favourites and tweaking them to make them that little bit healthier.

Challenge Three



That leads me nicely into this week’s challenge – which is to eat breakfast every day. When I first started this and looked at all the challenges I was most looking forward to this one as it was the one I knew I’d enjoy the most. Breakfast is definitely my favourite meal of the day and one I would very, very, rarely skip. But, that doesn’t mean my breakfast habits are perfect – my usual breakfast would be bran flakes with raisins – seemingly healthy, but actually adds up to quite a lot of Weight Watchers points, plus when I look at the ingredients – a lot of sugar.

So I gave myself my own little extra challenge along with not skipping breakfast – but also to concentrate on what I’m having a little more than just mindlessly reach for the bran flakes. I’ve continued to add fruit in there too – usually having a banana or satsuma with whatever I have for breakfast. It makes a surprisingly easy food to grab and eat on the go. I’ve also had a day or two where I’ve been having ‘Go Ahead’ cereal bars for when I have early meetings and need to leave the house in a hurry. They’re one of my new ‘constants’ in my bag to counter my FOH (fear of hunger… hate the idea of being somewhere and feeling hungry).

Along with the adding fruit in, I also created the ‘hero’ recipe for the week – a ‘Tropical Fruit Fool’. Basically a mango, passion fruit and greek yoghurt concoction that tasted as delicious as it sounds – but probably wouldn’t fall into my regular breakfast routine and I’d lean towards it as a desert option over breakfast. But yes, it was absolutely delicious! Definitely did not feel like I was following any sort of diet plan with that one. Plus it looks gorgeous – so would definitely make a guilt-free desert if you were having friends over and wanted to impress (easily – as it’s super quick to make too).

    I use weight watcher guidelines also. that Mango fruit dessert looks delicious. I have my whole weight loss journey where I lost 120 pounds on my blog if you are interested. Don’t give up, you can do it, I have found it easier, if you think about it as a lifestyle change instead of diet. We all are going to eat something that may not be the healthiest but we just have to get right back up.

    I’m always looking for new sugar free recipes for my no sugar challenge, so your mango & yogurt desert looks awesome!! I’ll definitely be trying that one!! 🙂

      I’m thinking of trying to cut out artificial sugar – so only fruit etc allowed for a sweet treat! How have you found sugar free life?

    that dessert looks amazing! something I love to have for breakfast is poached eggs with wholemeal or spelt toast, baked tomatoes and mushrooms and spinach mmmmm 🙂
